Rebe fixing collard greens

While a Peace Corps Volunteer I was visiting a friend’s farm in Grand Gedah County. Walked for hours to get to this house and I’m helping with dinner. Hold a bunch of collards in one hand and cut narrow slices right up next to your fingers. Cook with palm oil, Magi cubes, dried ground hog and plenty of pepper. Put on rice or fufu. Delicious!!

    collard greens liberia style was/is the sweetest chop on earth. my houseboy and I in zwedru used to cook colllard greens with smoked crocodile..now THAT was heaven on earth with plenty peppeh! put that on some “new rice” and you are gone pekin! remember NEW RICE–those delicate tender kernals from the first upland rice harvest. That was prime-o!
